Personally, I'm in favor of sacrificing the person's character to become a Death Knight. Then the character remains the same class, but with a new designation, retaining much of the original class abilities plus the new Death Knight abilities.

You'd have whole hybrid classes... Death Knight Mages, Death Knight Hunters, Death Knight Priests, etc. This will offer a whole new level of class design.
