Isn't Kul Tiras still around, making Gilneas one of two remaining nations? I don't remember reading that it got razed? Simply because it isn't represnented physically doesn't mean it it doesn't exist. Jaina's brother is ruling currently I believe.

Barring a drastic lore-change, yes, Kul Tiras is still out there under the leadership of Tandred Proudmoore, Jaina's brother. I suspect one of the reasons it's been kept out of the game so long is that introducing a virtually untouched, naval-heavy nation would give the Alliance a massive advantage over the Horde.

It WAS a naval heavy nation. What was left at the end of the Third War got trashed in the Battle of Theramore along with Admiral Daelin Proudmoore. I imagine they've been keeping quietly to themselves while the sole remaining Proudmoore son engaged in rebuilding.
