I had the impression that Sargeras' corruption happened before the Shaping of Azeroth.
However, in Silithus there's a quest telling players that during the battle between the Titans and the Oldies, a Titan 'fell'. I wouldn't be surprised if that means Sargeras himself was irreversibly corrupted at that time after eons of fighting with chaotic forces.

The eternal question of how did Sargeras become the dark titan, originally he was just a evil spirit/demon thing before being retconned into the lord of the burning legion.
One tale talks about him being corrupted by the eredar, but that was retconned due to the Draenai in BC. Another tale talks about his corruption by the nathrezim.
Honestly with all the retconning it might have been the old gods.
