As stated in previous entries of KYL, the elements don't pick sides. Old Gods picked lieutenants and empowered them so they can do their own thing better, and more intelligently.
As for what the titans used to create earthen, vyrkul and all that from: even players can subject elementals, so titans doubtlessly can.
Oh, and one more possebility on the element of creation: the titans are actually "Vanir" titans, or "stone giant" (titans(?)).
